The book of Ecclesiastes says that “there is no new thing under the sun”. This aphorism of ennui, set down more than 2,000 years ago, remains largely true today in the kitchen. Most people cook familiar crops and species using time-tested methods. But what is routine for one person may be delightfully new to another.
